Fruit Rainbow + Elderberry Maple Pride Dip
June is both Pride Month and Dairy Month, two great reasons for celebration around here!
We made up this fruit rainbow with Elderberry Maple Pride Dip for a recent family get together. The dip is three whole ingredients & came together in about 5 minutes, even with a toddler “helping”.
Tip 1: Give the cream cheese time to warm up a bit before starting. If you’re rushing around chasing a toddler, starting a fire or whatever else you may be doing and forget to warm it up, the dip may be a little lumpy. Mine maybe was. But it was still fabulous!
Tip 2: I used Organic Valley cream cheese and whipping cream for this recipe. I love me some dairy, and I find cream cheese in particular is an area where getting the good stuff makes a big difference in quality. I’m typically a pretty tight budgeted shopper, but dairy is an area where I go out of my way to support high quality sustainable products. Our fields are grazed by Organic Valley Grassmilk cows, and their contribution to the resilience of our hillsides to heavy rains has been super beneficial to us directly as well as to our watershed. Eating well can be such a simple way to make tangible, positive change in the world.

Pride Dip Ingredients:
1 C heavy cream
1 8oz package Cream Cheese, room temp
1 pack Embark Elderberry Maple Energy
Instructions:
Whip cream until stiff peaks form
Beat together cream cheese & Elderberry Maple Energy until creamy
Fold whipped cream into Elderberry Maple Cream Cheese
That’s It!
Put the dip in a pretty dish, arrange a rainbow of fruit around it and take a moment to reflect on how much better and more beautiful our communities are when all stripes of that rainbow have space on the tray. Then dig it, this is delicious!
